Claudio Castellanos, a resilient farmer, grew this high-elevation, cold-climate Catimor—a variety known for its robust adaptability to challenging climates. Despite the region’s hardships, including storms and the pandemic, the coffee stands out with its unique juniper note, along with a clean finish that balances fruity sweetness and subtle floral undertones. This Catimor’s complexity reflects both Claudio’s dedication and the distinctive terroir of the region.

The Bonaventure Coffee Project, launched in 2020, aims to support small producers like Claudio, who face severe financial challenges. This project was born from the need to help farmers who lost buyers and were at risk of falling into debt. Claudio’s story is a testament to resilience, and his coffee, with its unique profile, tells the tale of overcoming adversity and the remarkable potential of high-altitude Honduran coffees.
